Add an extra-special touch to your meal tonight with this fast, easy and fresh spinach rice recipe. With a little bit of fresh garlic and spinach, it’s *almost* health food.

Servings :  4-5
Preparation time : 25-30 min
Cooking time : 15-20 min

Ingredients :
  • 1 ½ cup rice
  • 1 ½ cup blanched spinach paste
  •  ½ cup crushed tomato
  • ½ cup onion ( fine chopped )
  • ¼ cup carrot ( fine chopped )
  • ¼ cup capsicum ( fine chopped )
  • 1 tsp chili garlic paste
  • 1 ½ tbsp garlic ( fine chopped )
  • 1 tsp oil
  • 1 tsp ghee
  • ½ tsp cumin seeds
  • 1 tsp lemon juice
  • 2 tbsp coriander ( fine chopped )
  • Salt according taste


Method :
  • Boil rice and cool it.
  • Heat oil and ghee in non-stick pan.
  • Add cumin seeds.
  • When they crackle, add onion.
  • Sauté onion till the onion turns translucent.
  • Add garlic. Sauté it till the garlic turn light golden brown color.
  • Add chili-ginger paste. Sauté it for 1-2 min.
  • Add carrot and capsicum and salt. Half cook them.
  • Add tomato puree and cook it for 2-3 min.
  • Add spinach paste and cook it for 5 min.
  • Add rice and gently mix it with gravy.
  • Cook rice for 2-3 min.
  • Garnish with chopped coriander.
  • Serve hot with fresh curd and roasted papad.
