spinach, it’s *almost* health food.

Ingredients
:
- 1 ½ cup rice
- 1 ½ cup blanched spinach paste
- ½ cup crushed tomato
- ½ cup onion ( fine chopped )
- ¼ cup carrot ( fine chopped )
- ¼ cup capsicum ( fine chopped )
- 1 tsp chili garlic paste
- 1 ½ tbsp garlic ( fine chopped )
- 1 tsp oil
- 1 tsp ghee
- ½ tsp cumin seeds
- 1 tsp lemon juice
- 2 tbsp coriander ( fine chopped )
- Salt according taste
Method
:
- Boil rice and cool it.
- Heat oil and ghee in non-stick pan.
- Add cumin seeds.
- When they crackle, add onion.
- Sauté onion till the onion turns translucent.
- Add garlic. Sauté it till the garlic turn light golden brown color.
- Add chili-ginger paste. Sauté it for 1-2 min.
- Add carrot and capsicum and salt. Half cook them.
- Add tomato puree and cook it for 2-3 min.
- Add spinach paste and cook it for 5 min.
- Add rice and gently mix it with gravy.
- Cook rice for 2-3 min.
- Garnish with chopped coriander.
- Serve hot with fresh curd and roasted papad.
