Aloo palak, an Indian classic sabzi is very easy to prepare and delightful to taste buds. It is a simple recipe with a combination of cubed potatoes and spinach gravy cooked with masalas and dry red chilies. Serve this subzi hot with rotis or parathas.

Servings : 4 – 5
Preparation time : 15 – 20
Cooking time : 10 - 15

Ingredients :
  • 1 ½ cup fried potatoes ( cut into medium size cube )
  • 1 cup spinach paste
  • ½  cup onion paste
  • 1 ½  cup tomato puree
  • 1 tbsp garlic paste
  • 1 tsp ginger paste
  • ½ tsp green chili paste
  • 1 tsp oil
  • 1 tsp ghee
  • ½ tsp coriander seeds
  • 1 bay leaf
  • 2 dry red chili
  • 2-3 black pepper
  • 1 green cardamom
  • 1 small piece cinnamon stick
  • ½  tsp Punjabi garam masala / kitchen king masala
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • Salt according to taste
  • 2 tbsp fresh cream
  • 1 tbsp curd
  • 1 tsp lemon juice
  • Coriander for garnishing

Method :
  • Heat oil and ghee.
  • Add dry bay leaf, red chili, cardamom, pepper and cinnamon stick.
  • Sauté for a while.
  • Add coarsely crushed coriander seeds.
  • Add garlic, ginger and chili paste.
  • Sauté for a minute.
  • Add onion paste. Mix well. Close the lid.
  • Cook till oil should start releasing from the mixture.
  • Add tomato puree. Add red chili powder, coriander powder, garam masala and salt.
  • Mix well. Close the lid.
  • Cook for 4-5 min.
  • Add spinach paste.
  • Cook till oil should start releasing from the mixture.
  • Turn off flame.
  • Add fried potatoes.
  • Add curd, cream and lemon juice.
  • Garnish with coriander.
  • Serve hot with hot parathas or roties.
