Kanda Poha is a yummy evergreen snack, simple snack that is commonly prepared in central India. It is made with beaten rice. It is a light snack best enjoyed at breakfast or in the evening with tea.



Servings – 4 to 5
Preparation time : 10 min
Cooking time : 15-20 min

Ingredients:
  • 4 cup poha (beaten rice flakes)
  • 2 medium size onion (fine chopped or thin slices)
  • 3-4 medium spicy green chili (fine chopped)
  • 8-10 curry leaves
  • 1 ¼ cup roasted peanuts
  • 1 tbsp cashew
  • 1 tbsp raisin
  • 3-4 tbsp oil
  • ½ tsp mustard seeds (rai)
  • ½ tsp cumin seeds (jeera)
  • 1 pinch Asafoetida (hing)
  • 1 tsp turmeric powder (haldi)
  • Salt according to taste (approx 1tsp)
  • 1 tbsp sugar (chini)
  • 1 tbsp lemon juice

For Garnishing : 
  • 2 tbsp fine chopped coriander
  • ¼ cup pomegranate seeds (anar) (optional)
  • ¼ cup sev (optional)
  • 2 tbsp fine chopped onion (optional)
  • 2 tbsp fine chopped tomato (optional)

Preparation : 
  • Place poha in a sieve and hold it under running water for few seconds. 
  • Toss well to drain out all excess water. 
  • Keep it aside at least for 10 mins.

Method :
  • Heat oil in a pan.
  • Add mustard seeds and when they splutter/crackle add cumin seeds. When cumin seeds splutter add asafoetida and curry leaves. Sauté  for half minute.
  • Add green chili and sauté for half minute.
  • Add roasted peanuts.
  • Add onion and sauté for 2 min.
  • Add turmeric powder and mix well.
  • Add poha and mix well.
  • Add salt and sugar and mix well.
  • Cover the pan and allow it to cook at least for 10 mins on slow flame.
  • Turn off the heat.
  • Add lemon juice and mix well.
  • Garnish it and serve hot.
