Kanda Poha is a yummy evergreen snack, simple snack that is
commonly prepared in central India. It is made with beaten rice. It is a light
snack best enjoyed at breakfast or in the evening with tea.
Servings – 4 to 5
Preparation time : 10 min
Cooking time : 15-20 min
Ingredients:
- 4
cup poha (beaten rice flakes)
- 2
medium size onion (fine chopped or thin slices)
- 3-4
medium spicy green chili (fine chopped)
- 8-10
curry leaves
- 1
¼ cup roasted peanuts
- 1
tbsp cashew
- 1
tbsp raisin
- 3-4
tbsp oil
- ½
tsp mustard seeds (rai)
- ½
tsp cumin seeds (jeera)
- 1
pinch Asafoetida (hing)
- 1
tsp turmeric powder (haldi)
- Salt
according to taste (approx 1tsp)
- 1
tbsp sugar (chini)
- 1 tbsp lemon juice
For Garnishing :
- 2
tbsp fine chopped coriander
- ¼
cup pomegranate seeds (anar) (optional)
- ¼
cup sev (optional)
- 2
tbsp fine chopped onion (optional)
- 2
tbsp fine chopped tomato (optional)
Preparation :
- Place
poha in a sieve and hold it under running water for few seconds.
- Toss
well to drain out all excess water.
- Keep
it aside at least for 10 mins.
Method :
- Heat oil in a pan.
- Add
mustard seeds and when they splutter/crackle add cumin seeds. When cumin
seeds splutter add asafoetida and curry leaves. Sauté for half
minute.
- Add
green chili and sauté for half minute.
- Add
roasted peanuts.
- Add
onion and sauté for 2 min.
- Add
turmeric powder and mix well.
- Add
poha and mix well.
- Add
salt and sugar and mix well.
- Cover
the pan and allow it to cook at least for 10 mins on slow flame.
- Turn
off the heat.
- Add
lemon juice and mix well.
- Garnish it and serve hot.
