Stuffed vegetables are often good in taste. Many people do not eat brinjal, but Stuffed Brinjals are liked by them. You can make this recipe in many ways. One of the best way is to make stuffed brinjals by stuffing peanut masala into it.


Servings – 3 to 4
Preparation time : 10-15 min
Cooking time : 20-25 min

Ingredients :
  • 12 Green Brinjal ( Ravaiya )
  • 2 medium size potatoes ( medium size cubes )
  • 2 tbsp oil
  • ¼ tsp mustard seeds
  • 1 pinch asafoetida
  • 1/8 tsp turmeric powder
  • Salt according to taste.
  • 2 medium tomatoes ( finely chopped / puree)
  • 2 tbsp water
  • 2 tbsp fine chopped coriander
      For Stuffing :
  • 4 tbsp gram flour ( chanano lot / besan )
  • 2 tbsp roasted peanuts ( coarsely grind )
  • 1 tbsp sesame seeds ( coarsely grind )
  • 1 tsp garlic paste
  • 1 tsp red chili
  • ½ tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp sugar
  • ½ tsp dry mango powder
  • Salt according to taste
  • 1 tsp lemon juice
  • 1 tsp oil 
Method for stuffing :
  • Roast gram flour in non stick pan for a while.
  • Turn off flame.
  • Mix all ingredients in gram flour.
Method :
  • Cut 3/4th brinjal from both side as shown in figure.
  • Stuff it with prepared stuffing.
  • Do it same for all brinjal.
  • Heat oil in non-stick pan.
  • Add mustard seeds and when they splutter/crackle add cumin seeds. When cumin seeds splutter add asafoetida ( Hing )
  • Add turmeric powder.
  • Add potatoes.
  • Add salt.
  • Add stuffed brinjal. Gently mix it.
  • Close lid. Cook it for a sometime on slow flame. ( Approx 12-15 min ). While cooking if required add little amount of water.
  • Add chopped tomatoes / tomato puree. Mix well.
  • Make a bed of left over mixture of stuffing over it. ( Don’t mix ). Sprinkle water on it.
  • Close lid. Cook it for some time.  ( Approx 8-10 min ).
  • Garnish with fine chopped coriander.
  • Serve hot with roti or parathas.
